Gluten Free Chocolate Hazelnut Cake

About the Recipe

This recipe is a crowd pleaser and gluten free! I have made it numerous times over the years and has always been a delight. The first time I made this cake, I made the Mocha Fluff Icing, but it was not very good. So I altered the filling recipe and just used that for the icing as well. Sometimes when baking you just have to try different things and experiment a bit.

Life Lesson 4

Always put the lid on the blender and do not try to scrap down the sides while it is on. Not really thinking about how messy the decision could be, I did that once. I ended up with cake batter on the walls and even on the ceiling!


  1. Gather all of your ingredients.wendy-26
  2. Measure the first 7 ingredients and you can pour them into a blender.wendy-32
  3. Blend until well combined.wendy-34
  4. Then pour the batter into 2 pans. Remember to pour equal amounts into each pan.wendy-37
  5. Bake at 350 F for about 25 minutes. You can test the cake using the clean knife method, or you can lightly touch the top of the cake. If the spot you touched bounces/ goes back to the shape it was before then the cake is done. If your finger makes an imprint in the cake, it is not done. wendy-38
  6. Let them cool, and in the mean time you can make the filling and icing.
  7. Combine all of the ingredients for the filling into a bowl and mix until combined. The softness of your butter will affect the consistency of the filling. It does not matter, as it will be going in between the layers of cake.
  8. Place one layer on a cake stand or plate, pour cake filling, then place the second layer on top.wendy-68

  9. Whip up the icing. You can use the same bowl and beaters as the filling. wendy-75
  10. You are now ready to ice your cake! You can use a knife or a spoon to spread the icing. I have a special tool to ice cake but you do not need one. wendy-85
  11. You can garnish the cake with some chocolate shavings and some hazelnuts.

  • 6 large eggs
  • 1 1cups hazelnuts (whole ones)
  • 1 cup white sugar
  • 1cup chocolate chips
  • 4 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1teaspoon salt


  • 2 tablespoons butter  softened
  • 1 cup icing sugar
  • 1 teaspoon cocoa
  • 1teaspoon vanilla
  • 2 tablespoons strong coffee


  • 4 tablespoons butter  softened
  • 2 cup icing sugar
  • 2 teaspoon cocoa
  • teaspoon vanilla
  • 2 tablespoons strong coffee
